Ethiopia / Shakiso Guji [Natural Process]

Introducing natural-processed beans from the Shakiso region of Ethiopia's Guji zone. Located in Udo Hadama village (Kebele), Shakiso Station receives cherries from over 500 smallholder farmers. Situated at an altitude of 1,950–2,100m, it serves as a vital hub for specialty coffee production within the Guji zone. Carefully selected cherries are dried on African beds over 10–14 days. Regular turning during the day ensures uniform drying, resulting in floral aromas and complex, fruity flavors. The cherries cultivated by farmers and brought to the station include native varieties like Badessa, Woritchu, and Kudume, as well as improved varieties such as 74158, 74112, and 74110. The station employs 14 permanent staff and approximately 250 seasonal workers hired during harvest, strictly adhering to equal opportunity and ethical labor practices. It also holds international certifications like Organic and RFA, actively working towards sustainable production and fair trade.
