Luis Felipe, a producer from Nariño Department, returned to farming—his “roots”—after a decade of experience in the coffee industry. He cultivates approximately 1,800 coffee trees using chemical-free organic farming methods and practices sustainable agriculture by utilizing coffee byproducts. He is currently focusing his efforts on growing Pink Bourbon, and through careful, extended post-harvest fermentation, he brings out the vibrant flavors and aromas unique to this variety.

ナリーニョ県出身のルイス・フェリペ(31歳)は、家族の伝統と土地への回帰を体現する生産者です 。彼の農園は標高1,950〜2,000mの急斜面にあり、目の前にはガレラス火山がそびえ立っています 。
彼は最初から農家だったわけではありません。
一度故郷を離れ、ガストロノミー(食学)を学び、バリスタやカッピングのトレーニングを積みました。10年にわたるコーヒー業界での経験を経て、「自分のルーツ」である農業へと戻ってきたのです。
約1,800本のコーヒーの木を、化学薬品を一切使わない有機農法で管理しています。コーヒーの副産物もすべて有効活用する持続可能なスタイルを貫いています。彼の農業の根底には、先住民としてのアイデンティティがあります。大地のサイクルやリズムを尊重する伝統的な知恵と、バリスタ時代に培った科学的な知識を融合させています。友人から譲り受けた希少な「ピンクブルボン」種の栽培に力を入れており、今回の収穫は彼にとって大きな節目となりました 。彼はこの種子を近隣の友人たちにも分け与え、産地全体での循環を大切にしています完熟したチェリーのみを丁寧に手摘みで収穫しています。
チェリーの状態で15時間、果肉除去後にタンクで2日間発酵させることで、この豆特有の際立った風味とアロマを醸成させています。アフリカンベッドを用い、理想的な条件下で10〜15日間かけてじっくりと天日乾燥させています 。
