This coffee is produced by Heyvis Sagastume, a owner of La Aguja farm. He is the eldest son of Sagastume family, which engages in coffee production in El Dorado village.
His father, Mr. Pedro, has been involved in the coffee industry in the village for a long time.
He has been dividing the vast area of his coffee farm into multiple plots for his three sons since several years ago,and they, as an independent producer, have been in charge of their own lands as new farms. Heyvis, as a member of the Sagastume family, checks on part of his family farm, but mostly focuses on his farm La Aguja, which is 5 km away from there.

La Aguja farm, which was started by the family in 1998, was inherited from Mr. Pedro to Mr. Heyvis in 2016, and now they grow Pacas and Parainema varieties there.

I have visited their base several times, but unfortunately I have not yet been able to visit their Aguja farm. When I was leaving, they got me original honey from the Sagastume family, which they produce only about a dozen bottles a year, which made me feel like visiting La Aguja even more.
Mr. Heyvis now has a home near his parents' house and lives with his own family, but the refining process is carried out at the facility of Mr. Pedro's home. After harvesting and pulping the coffee cherries, they get soaked in the water for 48 hours to improve the clean-cup quality.
After that, in order to stabilize the water activity value for as long as possible, they control the moisture by drying cherries for a long period of 14 to 20 days.
Slow drying has become quite popular in the quality control of recent specialty coffee, but slow drying seems to be a natural way in this mountainous area of Santa Barbara, where Lake Yojoa is located in its center and the moisture is maintained by water vapor from the lake.
His coffee is lined up on the tasting table every year when I visit there on a coffee origin trip, I’m always impressed, not only by the sweetness like stone fruits, unique to Pacas variety from Santa Barbara area, but also by how delicate, beautiful and clean flavor his coffee has, which seems to be challenging to be fully brought by roasting.

I have an impression that he is the most diligent among his brothers and his beautiful coffee reminds me of his attitude towards coffee production.Heyvis Sagastume's coffee is supported by local exporter "San Vicente".

The exporter is based in Pena Blanca, a small town in the northwestern part of Honduras. Their main clients are the producers of Santa Barbara area and currently have businesses with over 200 farmers.
The owner Mr. Ángel and several other members welcome and support the coffee importers and roasters of overseas countries so that the visitors get to see local coffee producers and farms, cup coffee, and start business with them.
Mr. Angel and Mr. Benjamin, who also own coffee plantations, have received rewards many times in international competitions such as Cup of Excellence.

They also support producers by being responsible for quality control; for example they measure moisture percentage and water activity value of green coffee, which is an indispensable process to maintain the quality.
They ship green coffee of which moisture value is managed between 10-11%, and water activity value between 0.40-0.60aw.
