This is specialty coffee at its finest.We were able to purchase Pacamara FW from the legendary El Injerto farm again this year.The Pacamara variety from this farm was sold as a special edition on the occasion of Onibus Coffee's 10th anniversary last year, and was very well received.Now, the top lot is only available at the farm's private auctions and is extremely rare.Enjoy these special beans, which have previously fetched an unbelievable $176 per kilogram of green beans at the Guatemala Cup of Excellence.We will only have a very small quantity of these beans in stock, and they will inevitably sell out immediately, so be sure to get in early.Of Guatemala's eight coffee-producing regions, Huehuetenango is the farthest from Guatemala City on the Mexican border.It is known as the "Highland Huehué," and is a very rugged, high altitude region with rocky terrain in places.In the winter, frost can be seen on harvest mornings. However, the dry, hot winds from Mexico blow through the region, creating a unique microclimate.This creates a unique microclimate that makes coffee production possible.The Lalibertad region is located south of the Uyehuetenango region near the Mexican border, and has produced many winners of the Cup of Excellence competition in the past.One of the most famous farms in the region is El Injerto, a regular award-winning farm. The very high altitude Bourbon grapes have been highly regarded for their small size and ripe flavor.Since the 2008 Cup of Excellence competition, when the estate's Pacamara coffee fetched $80.20 per pound (about 50 times the price of a regular coffee at the time!) Since then, theInjerto's Pacamara is now recognized as a top of the line specialty coffee with a strong personality. Today, along with Panama's Esmeralda Geisha, it is one of the world's best coffees, and has been specializing in high quality coffee since around 20 years ago, working on its own auction, varieties, and refining methods.Injerto Estate is located at the southern end of the Uwe Tenango Libertad district and is blessed with high altitude and water sources.Farm owner Aguirre's commitment to quality is very strict, and he has always worked to achieve the best.His son, Yuyo, and daughter have joined him in the family business.The perfectly red berries are a sight to behold every year when they are delivered to the water washing plant after Mr. Picker's harvest.The working environment is ideal, with good wages for the plantation workers and good roads.The Pacamara variety at this farm was first planted 25 years ago by Mr. Aguirre, who brought it back from El Salvador.At the time, the unique flavor of Pacamara was not accepted by any buyers, and it was very difficult to sell, forcing the farm to sell it at a reduced price instead of the Bourbon variety.There are three harvest seasons in a season, and "comendador" means "boss (plantation owner)," and this is the highest ranking lot in the plantation as the first lot harvested and reserved for the boss.It has a fresh, citrusy acidity, but with a velvety texture that makes it a wonderful Pacamara.We want everyone to enjoy this precious flavor.
