Onibus Coffee Ethiopia (washed process) is purchased from a washing station operated by BNT in Ethiopia. It is the emergence of the standard chererektu along with the wolka sakaro. It is a very clean coffee with nuances of peach and lemon, fragrant like a gorgeous black tea. The following is an excerpt from the importer document.
Variety: Ethiopian line variety
Cultivation area: East side of the Yirgachev region, Gedeo zone, Kochare area, Chelerektu Washing factory: Mergia Asefa washing factory (BNT partner factory), 600 workers
Altitude: 1,600m or more, there are also small-scale farmers around 2,000m.
Harvest time: From late November to around January
Farms: Yirgachev's small-scale farmers (0.5 to 10 ha) belonging to 900 farms
Production processing:The cherries harvested by small-scale farmers are transported to nearby washing plants and sales outlets. Putting well-ripened ones into factory tanks
The cherries are peeled with a Mackinnon disc pulper and the parchment is separated by a stream of water. Gravity sorting to P1, P2, and P3 (photo right) (P1 is the heaviest, highest grade.)
The parchment is led to a fermenter where it is fermented for approximately 36-48 hours. At the stage when the surface slides and peels off the parchment, it is washed in a water channel. After about half a day of soaking, the parchment is drained and dried in the sun on an African bed. Finish drying for 12 to 15 days while agitating the parchment and removing imperfections. After dry milling at the threshing factory, refined impurities are removed, shelling, gravity sorting, hand-picking, and the final refined raw beans are packed into hemp bags for export.
Chererektu is the name of this area, and the name Chererektu comes from the fact that the area used to be a lake and is rich in water resources. The Mergia Asefa Washing Factory is a washing factory located in Chelerektu, and has a deep relationship of trust with BNT since its founding over 10 years ago. It is owned by father Assefe and his son Mergia. Spring water from nearby waterfalls is pumped through the ground and used for washing, and after use, the water is filtered and drained. Between 11:00 and 15:00 when the sun is strong, cover the parchment with a plastic sheet. This is to protect the parchment and prevent it from drying too quickly. In addition to the high altitude, in this region right on the equator, too much sun can damage cherries and parchments, resulting in cloudy flavors. In addition, instead of the usual eight days of drying, slow drying takes 15 days (slow drying) to even out the moisture in the coffee and create a complex yet clean taste. It has been found that moderate drying has a significant impact on the shelf life of green beans in consumer countries. After drying and threshing, the raw beans are sorted by hand after mechanical sorting to complete high-quality FW coffee. The method is simple, but the power of people greatly affects the quality.
