This lot was purchased and processed by Leopoldo from Tipika-only cherries from small farmers around El Chaco.It is difficult for small farmers to secure sales channels, but Leopoldo processes them to produce good lots that can be sold at a high price.Leopold processes the cherries, making it possible to produce good lots and sell them at high prices.In the refining of this lot, only red cherries are carefully selected and harvested, and then they are floated in water to select only the densest berries. Then, to ensure that only the best cherries are selected, the cherries are spread out once on the African beds, and the selection is done again by hand.The cherries are then pulped, wet fermented for an average of 18 hours, and then rinsed. A plastic greenhouse is used for drying, to moderate excessive sunlight and to prevent parchment breakage.The crop is dried in African beds for 10 to 15 days, depending on weather conditions.
