This lot was purchased from our trusted Central American based exporter, Caravela.Caravela has its own grading system, and this lot is an "ML" grade bean with a cupping score of over 87 points. When we cupped the actual sample, we found the quality to be very high.It is clean and very complex in its fruitiness. The texture in the mouth is pleasant, with a long sweet finish.It is rare for us to find beans of this quality, and we hope that everyone will take this opportunity to try them.The following is an excerpt of information on the farm sent to us by Caravela.Lucy Maribel produces excellent quality coffee in San Agustin, a famous tourist destination.Buenavista Farm is a family-owned venture where she works with her husband Ever Lombachi, her father-in-law and well-known producer Carlos Lobanchi, and Ever's brothers.Lucy has been involved in coffee since 2016 and has always been helped and guided by her husband's family, who have a vast knowledge of quality coffee production.For her, specialty coffee production is a family endeavor, and she feels that the recognition of their quality coffee is what makes production possible.On the farm, everyone helps with every step of the process, including tree cleaning, weeding, cherry picking, processing, drying, recording, and general management. Lucy and her husband want to thank everyone for buying their coffee and want you to have a cup of coffee with them and experience firsthand the effort behind that cup of coffee.Lucy Maribel and Ever Armando begin the Pink Bourbon coffee process by picking the ripe cherries well.After harvesting, the cherries are taken to a wet mill where they ferment for 40 hours in a reception container.The cherries are then pulped without water and fermented in traditional tanks for 40 hours.After fermentation, the coffee is rinsed twice to clean the coffee and remove any floating defect beans.After rinsing, the beans are transferred to covered beds where they lie for 8 days.They are then stored on the farm for a few days and, after they have stabilized, are transported to the buying station in San Agustín.
