The Jose Herman Salazar ML Pink Bourbon we will be introducing this time is a farm located in Pitalito, the center of the Huila region. Pitalito is the confluence of three mountain ranges running north and south in Colombia, and is known as a famous coffee producing area. Nearby is the source of the Magdalena River, which creates a microclimate around the farm, creating a flavor unique to the area.
Jose was born in Nariño, but he came to Huila at the invitation of a friend who is a coffee farmer. While learning how to make coffee at his friend's farm, I fell in love with the farm in Bruceras near Pitalito, and after some negotiations, I was able to purchase this farm.
The farm used to be planted with Caturra, but his current farm is planted with 30% Pink Bourbon, 10% Castillo, and 60% Bourbon Ahi. Starting with the early Caturra variety and planting various varieties, these three varieties showed the most characteristics. After harvesting the cherries, we planted them in a nursery to grow seedlings and increase the number of trees. During this time, we met CARAVELA, and when we took a sample to their lab, we fell in love with its uniqueness, something we had never tasted before, and in 2015, we started working together as a team to specialize in high-quality coffee.
Did. Jose is a family of four: his wife Marina, his daughter Blanca and his son Joan. La Guaca Farm is a family farm where each family member plays a key role. Jose is in charge of overall management of the farm and harvesting the cherries, his daughter Blanca is in charge of farm management and record keeping, and his wife Marina is in charge of refining and drying. Jose feels that this family-only farm management method is more efficient and strengthens family unity. Jose is in the process of teaching Blanca everything about farms and coffee. Someday she will take over this farm and continue her legacy for many years to come.

There is also a rating based on cupping, and the highest grade ML (micro lot) is based on a cupping score of 88 points or higher, which only a very few producers can receive.
